Early Spring Awakening Pop Up Dinner
Early Spring Awakening
A Supper Club Pop Up at Fish Hawk Acres
March at Fish Hawk feels like the earth stretching its arms. The light hangs around longer. The air carries that faint green promise. This supper club pop up is built around that exact moment when winter loosens its grip and the table begins to bloom again.
Light. Bright. Garden energy with a coastal whisper.
First Course
Asparagus & Leek Soup with Lemon Crème Fraîche
Velvety green, gently sweet from slow cooked leeks, finished with a swirl of lemon crème fraîche that adds just enough sparkle to wake everything up.
Wine Pairing: Grüner Veltliner Crisp, herbaceous, with a hint of white pepper. Grüner loves asparagus. It mirrors the freshness and keeps the palate lively.
Second Course
Crab Cake with House Remoulade
Golden, delicate, packed with sweet crab and just enough crunch. Served simply, letting the seafood speak while the remoulade adds brightness and gentle heat.
Wine Pairing: Sancerre Mineral driven and citrus edged. It lifts the crab’s sweetness and cuts cleanly through the richness.
Third Course
Herb Roasted Chicken with Spring Vegetables
Crisp skinned, rosemary and thyme perfumed chicken nestled among carrots, tender greens, and early season vegetables. Comfort, but lighter. Familiar, but refreshed.
Wine Pairing: Chardonnay Balanced and softly structured. A restrained Chardonnay adds warmth and texture without overshadowing the herbs.
Fourth Course
Lemon Olive Oil Cake
Moist, fragrant, kissed with zest and sunshine. Served with a delicate dusting of sugar and perhaps a spoonful of softly whipped cream.
Wine Pairing: Prosecco Bright bubbles, a whisper of sweetness. It makes the lemon glow and leaves the evening feeling celebratory.
The Music
The soundtrack is airy and effortless.
Acoustic guitar. Soft piano. A little brushed drum jazz. Think the warmth of Norah Jones, a touch of Jack Johnson, and instrumental spring pieces inspired by Antonio Vivaldi drifting quietly beneath conversation.
Music that feels like open windows and linen curtains moving gently.
The Decor
• Sage and ivory table linens• Fresh tulips and sprigs of herbs in small glass jars• Lemon slices floating in clear carafes• Natural wood tables glowing in the late afternoon light• Taper candles that flicker as dusk settles
The room feels sunlit at first, then golden, then softly candlelit. Nothing heavy. Everything breathable.
The Vibe
Guests arrive in lighter layers. The room hums with the kind of conversation that feels easy and unhurried. Glasses clink softly. Courses arrive with intentional pauses in between.
It feels like the first real dinner party of the season. Like the garden is about to wake up. Like something new is beginning at the table.
Early Spring Awakening at Fish Hawk Supper Club. Fresh air. Fresh flavors. A table ready to bloom.
